Lomo Saltado (bolivian Beef Stir-fry)

Ingredients

  • 1 lb beef, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon red wine vinegar
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 3 tablespoons vegetable oil
  • 1 red onion, sliced
  • 2 tomatoes, sliced into wedges
  • 1 yellow chili pepper, sliced
  • 3 garlic cloves, minced
  • 1/4 cup beef broth
  • 2 tablespoons chopped cilantro
  • Salt to taste
  • 4 cups cooked white rice
  • 4 small potatoes, cut into wedges and fried

Instructions

  1. In a bowl, combine the beef, soy sauce, red wine vinegar, cumin, paprika, and black pepper. Let it marinate for 15 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over high heat. Add the marinated beef and stir-fry for 3-4 minutes until browned. Remove the beef from the skillet and set aside.
  3. In the same skillet, heat the remaining tablespoon of vegetable oil. Add the sliced red onion, tomatoes, yellow chili pepper, and minced garlic. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
  4. Return the cooked beef to the skillet. Add the beef broth and stir-fry for an additional 2 minutes. Season with salt to taste.
  5. Remove from heat and stir in the chopped cilantro.
  6. Serve the lomo saltado hot over the cooked white rice and fried potatoes.
