Lomo Saltado Chileno (chilean-style Beef Stir-fry)

Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 red onion, sliced
  • 2 tomatoes, sliced into wedges
  • 3 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 cup soy sauce
  • 1/4 cup red wine vinegar
  • 1/4 cup beef broth
  • Salt and pepper to taste
  • 3 green onions, chopped
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over high heat.
  2. Add the beef and cook until browned, then remove from the skillet and set aside.
  3. Heat the remaining oil in the same skillet and add the red onion, tomatoes, and garlic. Cook until the vegetables are tender.
  4. Return the beef to the skillet and add the cumin, paprika, soy sauce, red wine vinegar, and beef broth. Season with salt and pepper.
  5. Cook for a few more minutes until the beef is cooked through and the sauce has thickened.
  6. Stir in the green onions and cilantro, then remove from heat.
  7. Serve the Lomo Saltado Chileno hot with rice or French fries.
