Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 tablespoons vegetable oil
- 1 red onion, sliced
- 2 tomatoes, sliced into wedges
- 3 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/4 cup soy sauce
- 1/4 cup red wine vinegar
- 1/4 cup beef broth
- Salt and pepper to taste
- 3 green onions, chopped
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat 1 tablespoon of oil in a large skillet over high heat.
- Add the beef and cook until browned, then remove from the skillet and set aside.
- Heat the remaining oil in the same skillet and add the red onion, tomatoes, and garlic. Cook until the vegetables are tender.
- Return the beef to the skillet and add the cumin, paprika, soy sauce, red wine vinegar, and beef broth. Season with salt and pepper.
- Cook for a few more minutes until the beef is cooked through and the sauce has thickened.
- Stir in the green onions and cilantro, then remove from heat.
- Serve the Lomo Saltado Chileno hot with rice or French fries.
