Lomo Saltado (Peruvian Stir-Fry)
Lomo Saltado is a popular Peruvian stir-fry dish that combines marinated beef, onions, tomatoes, and other flavorful ingredients. This dish is a delicious fusion of Chinese and Peruvian flavors, making it a unique and satisfying meal.
Ingredients
- 1 lb beef sirloin, cut into strips
- 2 tablespoons soy sauce
- 1 tablespoon red wine vinegar
- 1 teaspoon cumin
- 1 teaspoon paprika
- 3 garlic cloves, minced
- 2 tablespoons vegetable oil
- 1 red onion, sliced
- 2 tomatoes, sliced into wedges
- 1 yellow chili pepper, sliced
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 4 cups cooked white rice
- French fries for serving
Instructions
- In a bowl, combine the beef strips, soy sauce, red wine vinegar, cumin, paprika, and minced garlic. Let it marinate for 15 minutes.
- Heat the vegetable oil in a large skillet over high heat. Add the marinated beef and cook for 3-4 minutes until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the sliced red onion and cook for 2 minutes. Then, add the tomato wedges and yellow chili pepper. Cook for an additional 2 minutes.
- Return the cooked beef to the skillet and stir in the chopped cilantro. Season with salt and pepper to taste.
- Serve the Lomo Saltado over the cooked white rice and accompany with French fries.
