Lomo Saltado (Peruvian Stir-Fry)

Ingredients

  • 1 lb beef sirloin, cut into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon red wine vinegar
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 3 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 1 red onion, sliced
  • 2 tomatoes, sliced into wedges
  • 1 yellow chili pepper, sliced
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • 4 cups cooked white rice
  • French fries for serving

Instructions

  1. In a bowl, combine the beef strips, soy sauce, red wine vinegar, cumin, paprika, and minced garlic. Let it marinate for 15 minutes.
  2. Heat the vegetable oil in a large skillet over high heat. Add the marinated beef and cook for 3-4 minutes until browned. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the sliced red onion and cook for 2 minutes. Then, add the tomato wedges and yellow chili pepper. Cook for an additional 2 minutes.
  4. Return the cooked beef to the skillet and stir in the chopped cilantro. Season with salt and pepper to taste.
  5. Serve the Lomo Saltado over the cooked white rice and accompany with French fries.
