Lomo Saltado (Stir-Fried Beef with Potatoes)

Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 large potatoes, cut into thick fries
- 1 red onion, sliced
- 2 tomatoes, sliced into wedges
- 3 garlic cloves, minced
- 1 tablespoon soy sauce
- 2 tablespoons vinegar
- 1 tablespoon aji amarillo paste (Peruvian yellow chili paste)
- 1/2 cup beef broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Season the beef slices with salt, pepper, and aji amarillo paste. Set aside.
- In a large skillet or wok, heat 1 tablespoon of oil over high heat. Add the potatoes and cook until golden and crispy. Remove from the skillet and set aside.
- Using the same skillet, add the remaining oil and stir-fry the beef until browned. Remove from the skillet and set aside.
- In the same skillet, sauté the garlic, red onion, and tomatoes until the onions are translucent.
- Return the beef and potatoes to the skillet. Add the soy sauce, vinegar, and beef broth. Stir-fry for a few more minutes until everything is well combined and heated through.
- Season with salt and pepper to taste. Garnish with chopped cilantro.
