Lomo Saltado (Stir-Fried Beef with Potatoes)

Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 large potatoes, cut into thick fries
  • 1 red onion, sliced
  • 2 tomatoes, sliced into wedges
  • 3 garlic cloves, minced
  • 1 tablespoon soy sauce
  • 2 tablespoons vinegar
  • 1 tablespoon aji amarillo paste (Peruvian yellow chili paste)
  • 1/2 cup beef broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Season the beef slices with salt, pepper, and aji amarillo paste. Set aside.
  2. In a large skillet or wok, heat 1 tablespoon of oil over high heat. Add the potatoes and cook until golden and crispy. Remove from the skillet and set aside.
  3. Using the same skillet, add the remaining oil and stir-fry the beef until browned. Remove from the skillet and set aside.
  4. In the same skillet, sauté the garlic, red onion, and tomatoes until the onions are translucent.
  5. Return the beef and potatoes to the skillet. Add the soy sauce, vinegar, and beef broth. Stir-fry for a few more minutes until everything is well combined and heated through.
  6. Season with salt and pepper to taste. Garnish with chopped cilantro.
