Ingredients
- 1 whole chicken, cut into pieces
- 2 tablespoons Sichuan peppercorns
- 1/4 cup dried red chilies
- 3 tablespoons vegetable oil
- 3 green onions, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine
- 1 tablespoon sugar
- Salt to taste
Instructions
- Heat a wok over high heat and dry roast the Sichuan peppercorns and dried red chilies until fragrant. Remove from the wok and grind into a fine powder.
- Heat the vegetable oil in the wok and add the chicken pieces. Stir-fry until the chicken is browned and cooked through. Remove from the wok and set aside.
- In the same wok, add the green onions, garlic, and ginger. Stir-fry until fragrant.
- Return the chicken to the wok and add the ground Sichuan peppercorn and chili powder, soy sauce, Shaoxing wine, sugar, and salt. Stir-fry until the chicken is evenly coated with the spicy mixture.
- Transfer the Dragon's Breath Spicy Chicken to a serving plate and garnish with additional chopped green onions if desired.
