Long Hu La Zi Ji (dragon's Breath Spicy Chicken)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 tablespoons Sichuan peppercorns
  • 1/4 cup dried red chilies
  • 3 tablespoons vegetable oil
  • 3 green onions, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sugar
  • Salt to taste

Instructions

  1. Heat a wok over high heat and dry roast the Sichuan peppercorns and dried red chilies until fragrant. Remove from the wok and grind into a fine powder.
  2. Heat the vegetable oil in the wok and add the chicken pieces. Stir-fry until the chicken is browned and cooked through. Remove from the wok and set aside.
  3. In the same wok, add the green onions, garlic, and ginger. Stir-fry until fragrant.
  4. Return the chicken to the wok and add the ground Sichuan peppercorn and chili powder, soy sauce, Shaoxing wine, sugar, and salt. Stir-fry until the chicken is evenly coated with the spicy mixture.
  5. Transfer the Dragon's Breath Spicy Chicken to a serving plate and garnish with additional chopped green onions if desired.
