Long Hu Xia Jiao, also known as Dragon's Breath Dumplings, is a classic dish in Chinese Aristocrat Cuisine. Ingredients
- 1 lb fresh shrimp, peeled and deveined
- 1/4 cup water chestnuts, finely chopped
- 2 green onions, finely chopped
- 1 tsp ginger, minced
- 1/2 tsp salt
- 1/4 tsp white pepper
- 1 package round dumpling wrappers
Instructions
- In a food processor, pulse the shrimp until finely chopped.
- Transfer the chopped shrimp to a bowl and add water chestnuts, green onions, ginger, salt, and white pepper. Mix well.
- Place a small spoonful of the shrimp mixture in the center of a dumpling wrapper. Moisten the edges with water and fold the wrapper in half, pressing to seal.
- Repeat with the remaining wrappers and filling.
- Bring a large pot of water to a boil. Add the dumplings and cook for 4-5 minutes, or until they float to the surface.
- Remove the dumplings with a slotted spoon and serve hot.
