Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup unsalted peanuts
- 3-4 dried red chilies
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 tbsp vegetable oil
- Marinade for chicken: <ul class="ingredientTags"> 2 tsp soy sauce
- 1 tsp cornstarch
- 1/2 tsp sesame oil
Instructions
- In a bowl, mix the chicken with the marinade ingredients and let it sit for 10 minutes.
- Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the chicken and stir-fry until cooked through. Remove from the wok and set aside.
- Heat the remaining oil in the wok. Add the dried chilies, green onions, garlic, and ginger. Stir-fry until fragrant.
- Return the chicken to the wok. Add the peanuts and the sauce. Cook, stirring constantly, until the sauce thickens and coats the chicken evenly.
- Transfer to a serving dish and serve hot with steamed rice.
