Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons Sichuan peppercorns
- 3-4 dried red chilies, chopped
- 4 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green onions, chopped
- 3 tablespoons soy sauce
- 2 tablespoons Chinese black vinegar
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
- 1 teaspoon cornstarch
- 1/2 cup water
Instructions
- In a dry pan, toast the Sichuan peppercorns over medium heat until fragrant. Remove from the pan and crush them using a mortar and pestle.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the dried red chilies, garlic, and ginger, and stir-fry for 1-2 minutes until fragrant.
- Add the cubed tofu to the wok and gently stir-fry for 3-4 minutes until lightly browned.
- In a small bowl, mix together the soy sauce, Chinese black vinegar, sugar, and cornstarch. Pour the mixture over the tofu and stir to coat.
- Add the water and crushed Sichuan peppercorns to the wok. Stir gently to combine all the ingredients.
- Simmer for 10-12 minutes, allowing the sauce to thicken and the flavors to meld.
- Sprinkle with chopped green onions before serving.
