Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons Sichuan peppercorns
- 1/4 cup soy sauce
- 3 tablespoons chili oil
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 green onions, chopped
- 1 tablespoon sugar
- 1 teaspoon cornstarch
- Salt to taste
Instructions
- In a small bowl, mix together the soy sauce, chili oil, sugar, and cornstarch. Set aside.
- Heat a wok or large skillet over high heat. Add the Sichuan peppercorns and dry roast for 1-2 minutes until fragrant. Remove from the wok and crush the peppercorns using a mortar and pestle.
- Season the chicken breasts with salt and then add them to the wok. Cook for 5-6 minutes until browned and cooked through.
- Push the chicken to one side of the wok and add the garlic, ginger, and green onions. Stir-fry for 1-2 minutes until fragrant.
- Pour the soy sauce mixture over the chicken and stir to coat. Cook for an additional 2-3 minutes until the sauce thickens.
- Sprinkle the crushed Sichuan peppercorns over the chicken before serving.
