Long Jing Xia (longjing Shrimp)
Long Jing Xia (Longjing Shrimp) is a classic dish from Zhejiang Cuisine, known for its fresh and delicate flavors. This dish features tender shrimp cooked in Longjing tea, creating a unique and aromatic taste that is both refreshing and satisfying.
Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 2 tablespoons Longjing tea leaves
- 3 slices fresh ginger
- 2 cloves garlic, minced
- 2 green onions, chopped
- 2 tablespoons vegetable oil
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/2 cup chicken broth
Instructions
- In a small bowl, soak the Longjing tea leaves in 1/4 cup of hot water for 5 minutes. Strain and reserve the tea.
- Heat the vegetable oil in a wok over high heat. Add the ginger and garlic, and stir-fry for 30 seconds.
- Add the shrimp and Shaoxing wine, and stir-fry for 2 minutes until the shrimp turn pink.
- Pour in the reserved Longjing tea, chicken broth, sugar, salt, and white pepper. Stir well and bring to a simmer.
- Cook for another 2-3 minutes until the shrimp are cooked through and the sauce has slightly thickened.
- Garnish with chopped green onions and serve hot.
