Long Jing Xia (longjing Shrimp)

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 tablespoons Longjing tea leaves
  • 3 slices fresh ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/2 cup chicken broth

Instructions

  1. In a small bowl, soak the Longjing tea leaves in 1/4 cup of hot water for 5 minutes. Strain and reserve the tea.
  2. Heat the vegetable oil in a wok over high heat. Add the ginger and garlic, and stir-fry for 30 seconds.
  3. Add the shrimp and Shaoxing wine, and stir-fry for 2 minutes until the shrimp turn pink.
  4. Pour in the reserved Longjing tea, chicken broth, sugar, salt, and white pepper. Stir well and bring to a simmer.
  5. Cook for another 2-3 minutes until the shrimp are cooked through and the sauce has slightly thickened.
  6. Garnish with chopped green onions and serve hot.
