Long Xu Tang, also known as Dragon's Beard Candy, is a traditional Chinese sweet that originated in Guangxi Cuisine. This delicate and intricate candy is made by repeatedly stretching and pulling a mixture of sugar and maltose to create numerous fine strands, resembling a dragon's beard.
Ingredients
- 2 cups granulated sugar
- 1/2 cup maltose
- 1/2 cup cornstarch
- 1/2 cup powdered sugar
- 1/2 cup roasted peanuts, finely chopped
Instructions
- In a large saucepan, combine the granulated sugar and maltose over medium heat. Stir until the sugar is completely dissolved.
- Add the cornstarch to the mixture and continue stirring until it thickens and becomes translucent.
- Remove the mixture from the heat and let it cool for a few minutes.
- Once the mixture is cool enough to handle, pull and stretch it repeatedly until it forms fine strands.
- Cut the strands into small pieces and dust them with powdered sugar and chopped peanuts.
- Twist and shape the candy into small bundles and serve immediately, or store in an airtight container.
