Ingredients

  • 12 large white mushrooms, stems removed and reserved
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1 clove garlic, minced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the reserved mushroom stems and sauté with onion, bell pepper, and garlic until softened.
  3. Remove from heat and stir in cheddar cheese, bread crumbs, Parmesan cheese, parsley, salt, and pepper.
  4. Fill each mushroom cap with the cheese mixture and place on a baking sheet.
