Ingredients
- 12 large white mushrooms, stems removed and reserved
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1 clove garlic, minced
- 1/2 cup shredded cheddar cheese
- 1/4 cup bread crumbs
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the reserved mushroom stems and sauté with onion, bell pepper, and garlic until softened.
- Remove from heat and stir in cheddar cheese, bread crumbs, Parmesan cheese, parsley, salt, and pepper.
- Fill each mushroom cap with the cheese mixture and place on a baking sheet.
