Looduse Rikkus (nature's Bounty)
Looduse rikkus, or Nature's Bounty, is a traditional dish from Dominica that celebrates the island's rich natural resources. This hearty and flavorful stew is a perfect representation of the island's bountiful harvest and vibrant cuisine.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups yams, peeled and diced
- 1 cup pumpkin, cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 cup okra, sliced
- 2 cups coconut milk
- 2 cups chicken broth
- 2 tbsp curry powder
- 1 scotch bonnet pepper, whole
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set aside.
- Add the onions, garlic, and bell pepper to the pot. Sauté until the onions are translucent.
- Stir in the curry powder and cook for another minute.
- Return the chicken to the pot and add the yams, pumpkin, tomatoes, okra, coconut milk, and chicken broth. Season with salt and pepper.
- Add the whole scotch bonnet pepper for flavor, but be careful not to burst it.
- Cover the pot and let the stew simmer for about 1 hour, or until the chicken is tender and the vegetables are cooked through.
- Discard the scotch bonnet pepper before serving.
