Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups yams, peeled and diced
  • 1 cup pumpkin, cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 cup okra, sliced
  • 2 cups coconut milk
  • 2 cups chicken broth
  • 2 tbsp curry powder
  • 1 scotch bonnet pepper, whole
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set aside.
  2. Add the onions, garlic, and bell pepper to the pot. Sauté until the onions are translucent.
  3. Stir in the curry powder and cook for another minute.
  4. Return the chicken to the pot and add the yams, pumpkin, tomatoes, okra, coconut milk, and chicken broth. Season with salt and pepper.
  5. Add the whole scotch bonnet pepper for flavor, but be careful not to burst it.
  6. Cover the pot and let the stew simmer for about 1 hour, or until the chicken is tender and the vegetables are cooked through.
  7. Discard the scotch bonnet pepper before serving.
