Ingredients
- 500g thick yellow noodles
- 500g pork belly, sliced
- 4 hard-boiled eggs, halved
- 2 cups chicken stock
- 1/4 cup black vinegar
- 1/4 cup soy sauce
- 1 tablespoon sugar
- 1 teaspoon white pepper
- 1 tablespoon cornstarch, mixed with 2 tablespoons water
- Chopped scallions, for garnish
- Sliced red chili, for garnish
Instructions
- Boil the noodles according to package instructions, then drain and set aside.
- In a pot, blanch the pork belly slices in boiling water for 5 minutes, then drain and set aside.
- In the same pot, combine chicken stock, black vinegar, soy sauce, sugar, and white pepper. Bring to a simmer.
- Add the blanched pork belly slices to the pot and let it simmer for 30 minutes until tender.
- Stir in the cornstarch mixture to thicken the gravy.
- To serve, divide the noodles into bowls, top with the pork belly slices, hard-boiled eggs, and ladle the gravy over. Garnish with chopped scallions and sliced red chili.
