Lotus Blossom Cold Sesame Noodles

Ingredients

  • 8 oz (225g) Chinese wheat noodles
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp (30ml) rice vinegar
  • 2 tbsp (30ml) sesame oil
  • 2 tbsp (30g) sugar
  • 2 cloves garlic, minced
  • 1 tsp (5g) grated ginger
  • 1/4 cup (60g) creamy peanut butter
  • 1/4 cup (60ml) water
  • 2 green onions, thinly sliced
  • 1/4 cup (30g) toasted sesame seeds

Instructions

  1. In a large pot of boiling water, cook the noodles according to the package instructions. Drain and rinse the noodles under cold water. Set aside.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, garlic, ginger, peanut butter, and water to make the sesame sauce.
  3. Toss the cold noodles with the sesame sauce until well coated.
  4. Garnish with green onions and toasted sesame seeds before serving.
