Lotus Blossom Spring Rolls

Ingredients
- 12 spring roll wrappers
- 1 cup shredded cabbage
- 1 cup julienned carrots
- 1 cup sliced bell peppers
- 1 cup bean sprouts
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped scallions
- 1/2 cup cooked rice vermicelli noodles
- 1/4 cup hoisin sauce
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 1 tsp grated ginger
- 1 tsp minced garlic
Instructions
- In a large bowl, combine the shredded cabbage, carrots, bell peppers, bean sprouts, cilantro, mint, scallions, and rice vermicelli noodles.
- In a small bowl, whisk together the hoisin sauce, soy sauce, sesame oil, ginger, and garlic. Pour this sauce over the vegetable mixture and toss to combine.
- Place a spring roll wrapper on a flat surface. Spoon about 1/4 cup of the vegetable filling onto the bottom third of the wrapper. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll up tightly.
- Heat a small amount of oil in a skillet over medium heat. Cook the spring rolls for 2-3 minutes on each side, or until golden brown and crispy.
- Serve the Lotus Blossom Spring Rolls with additional hoisin sauce for dipping.
