Lotus Blossom Spring Rolls

Ingredients

  • 12 spring roll wrappers
  • 1 cup shredded cabbage
  • 1 cup julienned carrots
  • 1 cup sliced bell peppers
  • 1 cup bean sprouts
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped scallions
  • 1/2 cup cooked rice vermicelli noodles
  • 1/4 cup hoisin sauce
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 tsp minced garlic

Instructions

  1. In a large bowl, combine the shredded cabbage, carrots, bell peppers, bean sprouts, cilantro, mint, scallions, and rice vermicelli noodles.
  2. In a small bowl, whisk together the hoisin sauce, soy sauce, sesame oil, ginger, and garlic. Pour this sauce over the vegetable mixture and toss to combine.
  3. Place a spring roll wrapper on a flat surface. Spoon about 1/4 cup of the vegetable filling onto the bottom third of the wrapper. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll up tightly.
  4. Heat a small amount of oil in a skillet over medium heat. Cook the spring rolls for 2-3 minutes on each side, or until golden brown and crispy.
  5. Serve the Lotus Blossom Spring Rolls with additional hoisin sauce for dipping.
