Instructions

  1. Place a nori sheet on a clean, dry surface.
  2. Spread half of the sushi rice evenly over the nori sheet, leaving a 1-inch border at the top.
  3. Arrange the cucumber, avocado, pickled ginger, shredded carrots, and daikon radish sprouts in the center of the rice.
  4. Roll the nori sheet into a burrito shape, using a bamboo sushi mat if available.
  5. In a small bowl, mix the soy sauce, rice vinegar, sugar, and sesame seeds to make a dipping sauce.
  6. Slice the sushi burrito in half and serve with the dipping sauce.
