Ingredients

  • 2 lotus roots, peeled and sliced

  • 1 tablespoon honey
  • 1 tablespoon fresh ginger, minced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snow peas
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, minced ginger, and minced garlic to make the sesame ginger sauce.
  2. Heat a wok or large skillet over medium-high heat. Add the lotus root slices and stir-fry for 5 minutes.
  3. Add the sliced bell peppers and snow peas to the wok and continue to stir-fry for another 3-4 minutes, or until the vegetables are tender-crisp.
  4. Pour the sesame ginger sauce over the stir-fried vegetables and lotus root. Stir well to coat everything in the sauce.
  5. Season with salt and pepper to taste.
