- 2 lotus roots, peeled and sliced

- 1 red bell pepper, sliced

Instructions
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, minced ginger, and minced garlic to make the sesame ginger sauce.
- Heat a wok or large skillet over medium-high heat. Add the lotus root slices and stir-fry for 5 minutes.
- Add the sliced bell peppers and snow peas to the wok and continue to stir-fry for another 3-4 minutes, or until the vegetables are tender-crisp.
- Pour the sesame ginger sauce over the stir-fried vegetables and lotus root. Stir well to coat everything in the sauce.
- Season with salt and pepper to taste.
