Loukaniko Love
Loukaniko is a traditional Cypriot sausage that is bursting with flavor. This recipe combines the rich flavors of pork, red wine, and a blend of aromatic spices to create a delicious sausage that is perfect for grilling or pan-frying.
Ingredients
- 1 kg ground pork
- 1/4 cup red wine
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp cayenne pepper

Instructions
- In a large mixing bowl, combine the ground pork, red wine, minced garlic, salt, black pepper, oregano, cumin, coriander, cinnamon, nutmeg, and cayenne pepper. Mix well until all the ingredients are evenly distributed.
- Prepare the natural hog casings by rinsing them thoroughly under cold water. Place the casings in a bowl of water and let them soak for 30 minutes to soften.
- Using a sausage stuffer, fill the casings with the pork mixture, tying off the ends to form individual sausages. Twist the sausages at regular intervals to create links.
- Heat a large skillet over medium heat and add a small amount of oil. Cook the loukaniko sausages for 15-20 minutes, turning occasionally, until they are browned and cooked through.
- Once cooked, remove the loukaniko from the skillet and let them rest for a few minutes before serving.
