Ingredients

  • 3 lbs leg of lamb
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and pepper.
  3. Rub the lamb with the garlic and herb mixture, ensuring it is evenly coated.
  4. Place the lamb in a roasting pan and roast in the preheated oven for 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  5. Remove the lamb from the oven and let it rest for 10 minutes before slicing and serving.
