Low-carb Chicken Alfredo Zoodles

Ingredients

  • 2 large zucchinis, spiralized into noodles
  • 1 lb chicken breast, sliced into strips
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  2. Add the chicken strips to the skillet and cook until they are no longer pink in the center, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
