Low-carb Stuffed Bell Peppers

Ingredients
- 4 large bell peppers
- 1 pound ground turkey
- 1 cup cauliflower rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the ground turkey to the skillet and cook until browned. Season with salt and pepper.
- Stir in the cauliflower rice and marinara sauce. Cook for an additional 5 minutes.
- Stuff the bell peppers with the turkey mixture and place them in a baking dish. Top each pepper with shredded mozzarella cheese.
- Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 5 minutes until the cheese is bubbly and golden.
- Remove from the oven and let the stuffed peppers cool for a few minutes before serving.
