Low-carb Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cauliflower rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the ground turkey to the skillet and cook until browned. Season with salt and pepper.
  5. Stir in the cauliflower rice and marinara sauce. Cook for an additional 5 minutes.
  6. Stuff the bell peppers with the turkey mixture and place them in a baking dish. Top each pepper with shredded mozzarella cheese.
  7. Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 5 minutes until the cheese is bubbly and golden.
  8. Remove from the oven and let the stuffed peppers cool for a few minutes before serving.
