Low-carb Zucchini Lasagna

Ingredients
- 2 large zucchinis, thinly sliced lengthwise
- 1 pound ground turkey
- 1 cup marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground turkey over medium heat until browned. Drain any excess fat.
- Stir in the marinara sauce and simmer for 5 minutes.
- In a bowl, combine the ricotta cheese, egg, oregano, basil, salt, and pepper.
- Spread a thin layer of the turkey and marinara mixture in the bottom of a baking dish.
- Layer zucchini slices on top of the turkey mixture.
- Spread half of the ricotta mixture over the zucchini.
- Sprinkle with half of the mozzarella cheese.
- Repeat the layers, ending with the remaining mozzarella and Parmesan cheese on top.
- Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it rest for 10 minutes before slicing and serving.
