Low-carb Zucchini Lasagna

Ingredients

  • 2 large zucchinis, thinly sliced lengthwise
  • 1 pound ground turkey
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground turkey over medium heat until browned. Drain any excess fat.
  3. Stir in the marinara sauce and simmer for 5 minutes.
  4. In a bowl, combine the ricotta cheese, egg, oregano, basil, salt, and pepper.
  5. Spread a thin layer of the turkey and marinara mixture in the bottom of a baking dish.
  6. Layer zucchini slices on top of the turkey mixture.
  7. Spread half of the ricotta mixture over the zucchini.
  8. Sprinkle with half of the mozzarella cheese.
  9. Repeat the layers, ending with the remaining mozzarella and Parmesan cheese on top.
  10. Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  11. Let it rest for 10 minutes before slicing and serving.
