Ingredients

  • 3 leeks, white and light green parts only, sliced
  • 2 tablespoons unsalted butter
  • 3 medium potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the leeks and cook until softened, about 5 minutes.
  2. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
