Ingredients
- 3 leeks, white and light green parts only, sliced
- 2 tablespoons unsalted butter
- 3 medium potatoes, peeled and diced
- 4 cups vegetable broth

Instructions
- In a large pot, melt the butter over medium heat. Add the leeks and cook until softened, about 5 minutes.
