Ingredients
- 2 cups grated taro
- 1 cup grated coconut
- 1 cup all-purpose flour
- 1/2 cup sugar

- 1 teaspoon baking powder
- 1 cup coconut milk
- 1 teaspoon vanilla extract
- Coconut oil for frying
Instructions
- In a large bowl, combine the grated taro, grated coconut, flour, sugar, salt, and baking powder.
- Add the coconut milk and vanilla extract to the dry ingredients and mix until well combined.
- Heat a skillet or frying pan over medium heat and lightly coat with coconut oil.
- Pour 1/4 cup of the batter onto the skillet and spread it into a round shape.
- Cook for 2-3 minutes on each side, or until golden brown.
- Repeat with the remaining batter, adding more coconut oil to the skillet as needed.
