Lu Lolo Mafini (taro And Coconut Muffins)
Lu Lolo Mafini, or Taro and Coconut Muffins, are a traditional Tuvaluan treat that combines the earthy flavor of taro with the sweetness of coconut. These muffins are perfect for breakfast or as a snack with a cup of tea.
Ingredients
- 2 cups grated taro
- 1 1/2 cups grated coconut
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup coconut milk
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the grated taro, grated coconut, flour, sugar, baking powder, and salt.
- In a separate bowl, mix together the coconut milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
