Ingredients
- 1 cup taro, peeled and diced
- 1 can (14 oz) coconut milk
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
Instructions
- In a pot, bring the taro and coconut milk to a boil. Reduce heat and simmer for 10 minutes, or until the taro is soft.
- Stir in the sugar and vanilla extract until the sugar is dissolved.
- Let the mixture cool to room temperature.
- Pour the mixture into popsicle molds and freeze for at least 4 hours, or until solid.
