Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup chestnuts, peeled
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 cups chicken broth
  • 2 tablespoons vegetable oil

Instructions

  1. Heat vegetable oil in a wok over medium heat. Add ginger, garlic, and green onions. Stir-fry until fragrant.
  2. Add chicken pieces to the wok and stir-fry until the chicken turns golden brown.
  3. Pour in soy sauce, Shaoxing wine, sugar, and salt. Stir well to coat the chicken.
  4. Add chestnuts and chicken broth to the wok. Bring to a boil, then reduce heat to low and simmer for 45 minutes, or until the chicken is tender.
  5. Transfer the braised chicken with chestnuts to a serving dish and garnish with chopped green onions.
