Lu Mi Ji (stewed Chicken With Chestnuts)

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup chestnuts, peeled
  • 3 slices ginger
  • 2 green onions, chopped
  • 3 tbsp soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the ginger and green onions, and sauté until fragrant.
  2. Add the chicken pieces to the pot and brown them on all sides.
  3. Pour in the soy sauce, Shaoxing wine, and sugar. Stir to coat the chicken.
  4. Add the chestnuts and chicken broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the chicken is tender.
  5. Season with salt and pepper to taste.
  6. Serve the stewed chicken with chestnuts hot, garnished with chopped green onions.
