Ingredients

  • 1 lb (450g) pork belly, cut into cubes
  • 1 cup chestnuts, peeled
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons Shaoxing wine
  • 3 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sugar
  • 1 star anise
  • 1 cinnamon stick
  • 2 cups water

Instructions

  1. Heat a wok or large skillet over medium heat. Add the pork belly and cook until the fat is rendered and the meat is browned.
  2. Add the ginger, garlic, and green onions. Stir-fry for a minute until fragrant.
  3. Pour in the Shaoxing wine, soy sauce, dark soy sauce, and sugar. Stir to combine.
  4. Add the chestnuts, star anise, cinnamon stick, and water. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the pork is tender and the sauce has thickened.
  5. Serve the braised pork with chestnuts hot with steamed rice.
