Ingredients
- 1 bunch of taro leaves, washed and chopped
- 1 onion, diced
- 2 tomatoes, chopped
- 1 can (400ml) coconut milk
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, sauté the diced onion until translucent.
- Add the chopped tomatoes and cook until they start to soften.
- Stir in the chopped taro leaves and cook for a few minutes.
- Pour in the coconut milk and vegetable broth, then bring the soup to a gentle simmer.
- Season with salt and pepper to taste, then let the soup simmer for 20-25 minutes, or until the taro leaves are tender.
