Lu Saka (taro Leaf Soup)

Ingredients

  • 1 bunch of taro leaves, washed and chopped
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 1 can (400ml) coconut milk
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the diced onion until translucent.
  2. Add the chopped tomatoes and cook until they start to soften.
  3. Stir in the chopped taro leaves and cook for a few minutes.
  4. Pour in the coconut milk and vegetable broth, then bring the soup to a gentle simmer.
  5. Season with salt and pepper to taste, then let the soup simmer for 20-25 minutes, or until the taro leaves are tender.
