Luau Pulled Pork Sliders

Ingredients

  • 3 lbs pork shoulder
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, grated
  • 12 slider buns
  • 1 cup coleslaw mix
  • 1/4 cup mayonnaise

Instructions

  1. In a slow cooker, combine the pork shoulder, pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger. Cook on low for 8 hours or high for 4 hours, until the pork is tender and easily pulls apart with a fork.
  2. Remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir it in the cooking liquid.
  3. In a small bowl, mix the coleslaw mix and mayonnaise to make the slaw.
  4. To assemble the sliders, place a generous portion of the pulled pork on the bottom half of each slider bun. Top with a spoonful of the coleslaw and cover with the top half of the bun.
