Luau Pulled Pork Sliders

Ingredients
- 3 lbs pork shoulder
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1 tbsp garlic, minced
- 1 tbsp ginger, grated
- 12 slider buns
- 1 cup coleslaw mix
- 1/4 cup mayonnaise
Instructions
- In a slow cooker, combine the pork shoulder, pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger. Cook on low for 8 hours or high for 4 hours, until the pork is tender and easily pulls apart with a fork.
- Remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir it in the cooking liquid.
- In a small bowl, mix the coleslaw mix and mayonnaise to make the slaw.
- To assemble the sliders, place a generous portion of the pulled pork on the bottom half of each slider bun. Top with a spoonful of the coleslaw and cover with the top half of the bun.
