Lubina a la Gallega, or Galician Style Sea Bass, is a traditional dish from the Galicia region of Spain. This simple and delicious recipe highlights the flavors of the sea bass with a few key ingredients.
Ingredients
- 4 sea bass fillets
- 4 large potatoes, thinly sliced
- 4 cloves of garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1 teaspoon smoked paprika
- Salt to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Place the sliced potatoes in a single layer on a baking dish and drizzle with olive oil. Season with salt and sprinkle half of the sliced garlic on top.
- Bake the potatoes for 15 minutes or until they start to turn golden brown.
- Season the sea bass fillets with salt and smoked paprika.
- Remove the baking dish from the oven and place the seasoned sea bass fillets on top of the potatoes. Scatter the remaining garlic slices over the fish.
- Return the dish to the oven and bake for an additional 10-12 minutes, or until the fish is cooked through.
- Garnish with fresh parsley before serving.
