Lucanian Stuffed Zucchini Blossoms

Ingredients

  • 12 zucchini blossoms
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons chopped fresh basil
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil

Instructions

  1. Gently rinse the zucchini blossoms and carefully remove the pistil from inside each blossom.
  2. In a bowl, mix together the ricotta cheese, Parmesan cheese, egg, chopped basil, salt, and pepper.
  3. Carefully stuff each zucchini blossom with the cheese mixture, then gently twist the petals to close the blossom.
  4. Place the flour in a shallow dish and lightly coat each stuffed blossom with flour, shaking off any excess.
  5. Heat the olive oil in a large skillet over medium heat. Once hot, add the stuffed zucchini blossoms and cook for 2-3 minutes on each side until golden brown.
  6. Remove the cooked blossoms from the skillet and place them on a paper towel to drain any excess oil.
  7. Serve the stuffed zucchini blossoms warm and enjoy!
