Lucanian Stuffed Zucchini Blossoms

Ingredients
- 12 zucchini blossoms
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons chopped fresh basil
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
Instructions
- Gently rinse the zucchini blossoms and carefully remove the pistil from inside each blossom.
- In a bowl, mix together the ricotta cheese, Parmesan cheese, egg, chopped basil, salt, and pepper.
- Carefully stuff each zucchini blossom with the cheese mixture, then gently twist the petals to close the blossom.
- Place the flour in a shallow dish and lightly coat each stuffed blossom with flour, shaking off any excess.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the stuffed zucchini blossoms and cook for 2-3 minutes on each side until golden brown.
- Remove the cooked blossoms from the skillet and place them on a paper towel to drain any excess oil.
- Serve the stuffed zucchini blossoms warm and enjoy!
