Lucanian Zucchini And Ricotta Fritters

Ingredients

  • 2 medium zucchinis, grated and drained
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • 1/4 cup olive oil for frying

Instructions

  1. In a large bowl, combine the grated zucchini, ricotta cheese, Parmesan cheese, eggs, flour, garlic, basil, salt, and pepper. Mix until well combined.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Scoop about 1/4 cup of the zucchini mixture and carefully drop it into the hot oil, flattening it slightly with a spatula. Repeat to cook 4-5 fritters at a time, depending on the size of your skillet.
  4. Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
  6. Serve the fritters warm with a side of marinara sauce or a dollop of sour cream for dipping.
