Lucanian Zucchini And Ricotta Fritters
Lucanian Zucchini and Ricotta Fritters are a delicious and traditional dish from the Basilicatan (Lucanian) cuisine. These fritters are crispy on the outside and soft on the inside, making them a perfect appetizer or snack.
Ingredients
- 2 medium zucchinis, grated and drained
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 eggs
- 1/4 cup all-purpose flour
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- 1/4 cup olive oil for frying
Instructions
- In a large bowl, combine the grated zucchini, ricotta cheese, Parmesan cheese, eggs, flour, garlic, basil, salt, and pepper. Mix until well combined.
- Heat the olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture and carefully drop it into the hot oil, flattening it slightly with a spatula. Repeat to cook 4-5 fritters at a time, depending on the size of your skillet.
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve the fritters warm with a side of marinara sauce or a dollop of sour cream for dipping.
