Ingredients

  • 1 whole pike fish, cleaned and scaled
  • 2 onions, thinly sliced

  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the pike fish with salt, pepper, and sweet paprika.
  3. Place the sliced potatoes and onions in a baking dish and drizzle with olive oil. Season with salt and pepper.
  4. Place the seasoned pike fish on top of the potatoes and onions.
  5. Sprinkle minced garlic over the fish and drizzle with more olive oil.
  6. Cover the dish with aluminum foil and bake for 25-30 minutes, or until the fish is cooked through.
  7. Remove the foil and broil for an additional 5 minutes to crisp up the fish and potatoes.
  8. Serve the Lucio a la Gallega hot, garnished with fresh parsley if desired.
