Lucio a la Gallega, or Galician Style Pike, is a traditional dish from the Galician cuisine that features tender and flavorful pike fish cooked with a variety of aromatic ingredients.
Ingredients
- 1 whole pike fish, cleaned and scaled
- 2 onions, thinly sliced
- 4 potatoes, peeled and sliced
- 4 garlic cloves, minced
- 1 teaspoon sweet paprika
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the pike fish with salt, pepper, and sweet paprika.
- Place the sliced potatoes and onions in a baking dish and drizzle with olive oil. Season with salt and pepper.
- Place the seasoned pike fish on top of the potatoes and onions.
- Sprinkle minced garlic over the fish and drizzle with more olive oil.
- Cover the dish with aluminum foil and bake for 25-30 minutes, or until the fish is cooked through.
- Remove the foil and broil for an additional 5 minutes to crisp up the fish and potatoes.
- Serve the Lucio a la Gallega hot, garnished with fresh parsley if desired.
