Lucknowi Dum Biryani (लखनवी दम बिरयानी)

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup milk
  • 1/2 teaspoon saffron strands
  • Whole spices: bay leaves, cinnamon, cardamom, cloves
  • Fresh coriander and mint leaves
  • Salt to taste

Instructions

  1. Wash and soak the basmati rice for 30 minutes. Drain and set aside.
  2. Marinate the chicken with yogurt, salt, and biryani masala. Let it marinate for 1 hour.
  3. Heat ghee in a pan and sauté the onions until golden brown. Add the tomatoes and cook until they turn soft.
  4. In a large pot, layer the marinated chicken, half-cooked rice, saffron milk, fried onions, and whole spices. Repeat the layers.
  5. Cover the pot with a tight lid and cook on low heat for 45 minutes to 1 hour until the biryani is fully cooked.
  6. Garnish with fresh coriander and mint leaves before serving.
