लखनवी दम बिरयानी (Lucknowi Dum Biryani) is a classic dish from the Uttar Pradesh cuisine, known for its aromatic flavors and rich taste. This biryani is a perfect combination of fragrant rice, tender meat, and a blend of spices, slow-cooked to perfection.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 1/4 cup ghee
- 1/4 cup milk
- 1/2 teaspoon saffron strands
- Whole spices: bay leaves, cinnamon, cardamom, cloves
- Fresh coriander and mint leaves
- Salt to taste
Instructions
- Wash and soak the basmati rice for 30 minutes. Drain and set aside.
- Marinate the chicken with yogurt, salt, and biryani masala. Let it marinate for 1 hour.
- Heat ghee in a pan and sauté the onions until golden brown. Add the tomatoes and cook until they turn soft.
- In a large pot, layer the marinated chicken, half-cooked rice, saffron milk, fried onions, and whole spices. Repeat the layers.
- Cover the pot with a tight lid and cook on low heat for 45 minutes to 1 hour until the biryani is fully cooked.
- Garnish with fresh coriander and mint leaves before serving.
