Lucknowi Galouti Kebab (लखनवी गलौटी कबाब)

Ingredients

  • 500g finely minced mutton
  • 2 tbsp raw papaya paste
  • 1 tbsp ginger-garlic paste
  • 1/2 cup fried onions
  • 1/2 cup hung curd
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 1/2 tsp saffron soaked in milk
  • 1/2 tsp nutmeg powder
  • 1/2 tsp mace powder
  • Salt to taste
  • 4 tbsp ghee
  • 1/4 cup milk
  • 1/4 cup chopped coriander leaves
  • 1/4 cup chopped mint leaves
  • 2 tbsp lemon juice
  • Silver leaf (optional, for garnish)

Instructions

  1. Mix minced mutton, raw papaya paste, ginger-garlic paste, fried onions, hung curd, garam masala, red chili powder, saffron, nutmeg powder, mace powder, and salt in a bowl.
  2. Cover and refrigerate the mixture for 2 hours.
  3. Heat ghee in a pan and add the marinated mutton mixture. Cook on low heat until the mutton is tender.
  4. Add milk and cook until the mixture dries up.
  5. Add chopped coriander leaves, mint leaves, and lemon juice. Mix well.
  6. Remove from heat and let it cool slightly.
  7. Divide the mixture into equal portions and shape them into kebabs.
  8. Heat a griddle and cook the kebabs with ghee until they are golden brown and cooked through.
  9. Garnish with silver leaf and serve hot with mint chutney.
