Lucknowi Galouti Kebab (लखनवी गलौटी कबाब)
लखनवी गलौटी कबाब (Lucknowi Galouti Kebab) is a famous dish from the Uttar Pradesh Cuisine, known for its rich flavors and tender texture. This melt-in-your-mouth kebab is a must-try for all the food enthusiasts.
Ingredients
- 500g finely minced mutton
- 2 tbsp raw papaya paste
- 1 tbsp ginger-garlic paste
- 1/2 cup fried onions
- 1/2 cup hung curd
- 1 tsp garam masala
- 1 tsp red chili powder
- 1/2 tsp saffron soaked in milk
- 1/2 tsp nutmeg powder
- 1/2 tsp mace powder
- Salt to taste
- 4 tbsp ghee
- 1/4 cup milk
- 1/4 cup chopped coriander leaves
- 1/4 cup chopped mint leaves
- 2 tbsp lemon juice
- Silver leaf (optional, for garnish)
Instructions
- Mix minced mutton, raw papaya paste, ginger-garlic paste, fried onions, hung curd, garam masala, red chili powder, saffron, nutmeg powder, mace powder, and salt in a bowl.
- Cover and refrigerate the mixture for 2 hours.
- Heat ghee in a pan and add the marinated mutton mixture. Cook on low heat until the mutton is tender.
- Add milk and cook until the mixture dries up.
- Add chopped coriander leaves, mint leaves, and lemon juice. Mix well.
- Remove from heat and let it cool slightly.
- Divide the mixture into equal portions and shape them into kebabs.
- Heat a griddle and cook the kebabs with ghee until they are golden brown and cooked through.
- Garnish with silver leaf and serve hot with mint chutney.
