Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh coriander leaves
  • 1 tbsp ginger-garlic paste
  • Whole spices (cinnamon, cardamom, cloves)
  • Saffron strands soaked in milk

Instructions

  1. Wash and soak the basmati rice for 30 minutes.
  2. Marinate the chicken with yogurt, ginger-garlic paste, and salt for 1 hour.
  3. Heat ghee in a pan and sauté the onions until golden brown.
  4. Add the marinated chicken and cook until tender.
  5. Layer the cooked chicken, rice, mint leaves, and coriander leaves in a heavy-bottomed pan.
  6. Sprinkle saffron milk and fried onions on top.
  7. Cover and cook on low heat until the rice is done.
