Ingredients

  • 2 lbs beef, cut into chunks
  • 2 onions, finely sliced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1/4 cup yogurt
  • 2 tbsp ghee (clarified butter)
  • 2 bay leaves
  • 4 green cardamom pods
  • 1 cinnamon stick
  • 1 tsp turmeric
  • 1 tbsp coriander powder
  • 1 tbsp red chili powder
  • Salt to taste
  • 4 cups water

Instructions

  1. Heat ghee in a large pot over medium heat. Add the sliced onions and cook until golden brown.
  2. Add the garlic, ginger, and tomatoes. Cook until the tomatoes are soft.
  3. Add the beef chunks, yogurt, and spices. Cook for 5 minutes.
  4. Pour in the water and bring the stew to a boil. Reduce the heat to low, cover, and simmer for 4 hours until the beef is tender.
  5. Once the beef is cooked, adjust the seasoning and serve hot.
