Lucuma Cheesecake

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 1 cup lucuma pulp
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth. Beat in eggs one at a time. Fold in lucuma pulp. Pour mixture over crust in the springform pan.
- Bake in preheated oven for 60 minutes, or until center is almost set. Allow to cool, then refrigerate for at least 4 hours before serving.
