Lucuma Cheesecake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 cup lucuma pulp

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth. Beat in eggs one at a time. Fold in lucuma pulp. Pour mixture over crust in the springform pan.
  4. Bake in preheated oven for 60 minutes, or until center is almost set. Allow to cool, then refrigerate for at least 4 hours before serving.
