Lumpia Satay (tempeh Satay Wraps)

Ingredients

  • 12 lumpia wrappers
  • 1 block of tempeh, cut into cubes
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 12 bamboo skewers, soaked in water
  • Oil for cooking

Instructions

  1. In a bowl, mix together the soy sauce, brown sugar, garlic, coriander, cumin, turmeric, and cayenne pepper. Add the tempeh cubes and marinate for 15 minutes.
  2. Thread the marinated tempeh cubes onto the soaked bamboo skewers.
  3. Heat oil in a pan over medium heat. Cook the tempeh skewers for 2-3 minutes on each side, until golden brown and cooked through.
  4. Place a cooked tempeh skewer on a lumpia wrapper and roll it up, folding the sides in as you go.
  5. Repeat with the remaining tempeh skewers and wrappers.
  6. Heat oil in a pan over medium heat. Cook the wrapped tempeh skewers for 2-3 minutes on each side, until the wrappers are golden brown and crispy.
  7. Serve the lumpia satay with your favorite dipping sauce.
