Ingredients

  • 1 pound river snails
  • 8 cups water

  • 1 piece of pickled green beans
  • 1 piece of pickled mustard greens
  • 1 piece of pickled radish
  • 1 piece of tofu skin
  • 1 piece of dried turnip
  • 1 piece of daylily
  • 1 piece of black fungus
  • 1 piece of peanuts
  • 1 piece of garlic
  • 1 piece of ginger
  • 1 piece of scallion
  • 1 piece of coriander
  • 1 piece of pickled chili
  • 1 piece of chili oil
  • 1 piece of fermented soybeans

Instructions

  1. Prepare the river snails by cleaning and removing any dirt or impurities.
  2. Boil the river snails in water for 10 minutes, then remove and rinse them thoroughly.
  3. Boil the Liuzhou river snails rice noodles according to the package instructions.
  4. Prepare the pickled vegetables, tofu skin, dried turnip, daylily, black fungus, and peanuts by soaking them in water until soft.
  5. Chop the garlic, ginger, scallion, and coriander.
  6. In a large pot, add the water and bring it to a boil. Then add the river snails, pickled vegetables, tofu skin, dried turnip, daylily, black fungus, and peanuts. Simmer for 20 minutes.
  7. Add the chopped garlic, ginger, and scallion to the pot and simmer for an additional 10 minutes.
  8. Divide the cooked Liuzhou river snails rice noodles into serving bowls.
  9. Ladle the hot broth and ingredients over the noodles.
  10. Garnish with coriander, pickled chili, and a drizzle of chili oil.
  11. Serve hot and enjoy!
