Lutenitsa is a traditional Bukharan Jewish sweet and spicy tomato and pepper stew that is bursting with flavor. It is a versatile condiment that can be used as a spread, dip, or sauce, and it pairs perfectly with bread, crackers, or grilled meats.
Ingredients
- 4 large red bell peppers, roasted, peeled, and diced
- 4 ripe tomatoes, peeled and diced
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1/4 cup sunflower oil
- 2 tbsp red wine vinegar
- 2 tbsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large pot, heat the sunflower oil over medium heat. Add the onions and garlic, and sauté until soft and translucent.
- Add the diced tomatoes and roasted red bell peppers to the pot. Cook for 15-20 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens.
- Stir in the red wine vinegar, sugar, salt, and black pepper. Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally, until the stew reaches a thick, spreadable consistency.
- Remove from heat and let the lutenitsa cool to room temperature. Transfer to sterilized jars and store in the refrigerator for up to 2 weeks.
