Ingredients

  • 4 large red bell peppers, roasted, peeled, and diced
  • 4 ripe tomatoes, peeled and diced
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1/4 cup sunflower oil
  • 2 tbsp red wine vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large pot, heat the sunflower oil over medium heat. Add the onions and garlic, and sauté until soft and translucent.
  2. Add the diced tomatoes and roasted red bell peppers to the pot. Cook for 15-20 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens.
  3. Stir in the red wine vinegar, sugar, salt, and black pepper. Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally, until the stew reaches a thick, spreadable consistency.
  4. Remove from heat and let the lutenitsa cool to room temperature. Transfer to sterilized jars and store in the refrigerator for up to 2 weeks.
