Lyon Sausage (lyonnaise-style Saucisson De Lyon)
Lyon Sausage, also known as Lyonnaise-style Saucisson de Lyon, is a traditional French sausage hailing from the city of Lyon. This savory and flavorful sausage is a staple in Lyonnaise cuisine and is perfect for a variety of dishes, from salads to stews.
Ingredients
- 2 lbs pork shoulder, cubed
- 1/2 lb pork fatback, cubed
- 2 tsp salt
- 1 tsp black pepper
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/4 cup dry white wine
- 2 tbsp minced garlic
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 2 tbsp pistachios, shelled
- 2 tbsp cognac
- 1 tsp pink curing salt
- 1 pork casing
Instructions
- In a large bowl, combine the cubed pork shoulder, pork fatback, salt, black pepper, nutmeg, cloves, dry white wine, minced garlic, parsley, green onions, pistachios, cognac, and pink curing salt. Mix well to combine.
- Refrigerate the mixture for 24 hours to allow the flavors to meld.
- After marinating, stuff the mixture into the pork casing, twisting it at regular intervals to form individual sausages.
- Bring a large pot of water to a boil, then reduce the heat to a simmer. Add the sausages and poach for 20 minutes.
- Remove the sausages from the water and let them cool. Once cooled, the Lyon Sausage is ready to be enjoyed!
