Lyonnaise Onion Soup (Soupe à l'oignon Lyonnaise)

Ingredients

  • 4 large onions, thinly sliced
  • 4 tbsp butter
  • 2 tbsp all-purpose flour
  • 6 cups beef broth
  • 1 cup dry white wine
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 slices of French bread
  • 1 1/2 cups grated Gruyère cheese

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced onions and cook until caramelized, about 30 minutes.
  2. Sprinkle the flour over the caramelized onions and stir to coat.
  3. Pour in the beef broth and white wine. Add the bay leaf, and season with salt and pepper. Simmer for 30 minutes.
  4. Preheat the broiler. Ladle the soup into oven-safe bowls. Top each bowl with a slice of French bread and a generous amount of Gruyère cheese.
  5. Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
  6. Serve hot and enjoy!
