Lyonnaise Onion Soup (Soupe à l'oignon Lyonnaise)
A classic French onion soup from the Lyonnaise cuisine, featuring caramelized onions and a rich beef broth topped with crusty bread and melted cheese.
Ingredients
- 4 large onions, thinly sliced
- 4 tbsp butter
- 2 tbsp all-purpose flour
- 6 cups beef broth
- 1 cup dry white wine
- 1 bay leaf
- Salt and pepper to taste
- 4 slices of French bread
- 1 1/2 cups grated Gruyère cheese
Instructions
- In a large pot, melt the butter over medium heat. Add the sliced onions and cook until caramelized, about 30 minutes.
- Sprinkle the flour over the caramelized onions and stir to coat.
- Pour in the beef broth and white wine. Add the bay leaf, and season with salt and pepper. Simmer for 30 minutes.
- Preheat the broiler. Ladle the soup into oven-safe bowls. Top each bowl with a slice of French bread and a generous amount of Gruyère cheese.
- Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
- Serve hot and enjoy!
