Ingredients
- 1 lb (450g) sausage, such as Toulouse or Morteau
- 1 1/2 cups (180g) all-purpose flour
- 2 tsp (7g) active dry yeast
- 1/4 cup (50g) granulated sugar
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) warm milk
- 2 eggs
- 1/2 cup (115g) unsalted butter, softened
Instructions
- In a small bowl, dissolve the yeast and 1 teaspoon of sugar in the warm milk. Let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine the flour, remaining sugar, and salt. Make a well in the center and add the yeast mixture and eggs. Mix until a dough forms.
- Add the softened butter and knead the dough until smooth and elastic. Cover and let it rise in a warm place for 1 hour.
- Preheat the oven to 375°F (190°C). Roll out the dough into a rectangle and place the sausage in the center. Fold the dough over the sausage, sealing the edges.
- Place the brioche-wrapped sausage on a baking sheet and bake for 25 minutes or until golden brown.
