Ingredients
- 2 lbs beef tripe
- 1 cup all-purpose flour
- 3 eggs, beaten
- 2 cups breadcrumbs

- 1 bouquet garni (thyme, bay leaf, parsley)

Instructions
- Prepare the beef tripe by boiling it in water for 30 minutes, then drain and pat dry.
- Dredge the tripe in flour, dip in beaten eggs, and coat with breadcrumbs.
- Heat oil in a pan and fry the breaded tripe until golden brown and crispy.
- In a separate pot, sauté the onion and garlic, then add the beef broth, white wine, and bouquet garni. Simmer for 20 minutes.
- Place the fried tripe in the broth mixture and simmer for an additional 10 minutes.
- Season with salt and pepper, then serve hot.
