Instructions

  1. Prepare the beef tripe by boiling it in water for 30 minutes, then drain and pat dry.
  2. Dredge the tripe in flour, dip in beaten eggs, and coat with breadcrumbs.
  3. Heat oil in a pan and fry the breaded tripe until golden brown and crispy.
  4. In a separate pot, sauté the onion and garlic, then add the beef broth, white wine, and bouquet garni. Simmer for 20 minutes.
  5. Place the fried tripe in the broth mixture and simmer for an additional 10 minutes.
  6. Season with salt and pepper, then serve hot.
