Ma La Doufu (spicy Manchu Mapo Tofu)
Ma La Doufu, also known as Spicy Manchu Mapo Tofu, is a classic dish from Manchu Cuisine that combines the numbing heat of Sichuan peppercorns with the spiciness of chili peppers. This dish is a flavorful and aromatic tofu dish that is sure to excite your taste buds.
Ingredients
- 1 block (14 oz) firm tofu, cut into cubes
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green onions, chopped
- 2 tbsp doubanjiang (spicy bean paste)
- 1 tbsp Sichuan peppercorns
- 2 tbsp chili oil
- 1 cup vegetable broth
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Heat the vegetable oil in a wok or large skillet over medium heat.
- Add the garlic, ginger, and green onions, and stir-fry for 1-2 minutes until fragrant.
- Add the doubanjiang, Sichuan peppercorns, and chili oil, and stir-fry for another minute.
- Pour in the vegetable broth, soy sauce, and sugar. Bring to a simmer.
- Add the tofu cubes and gently stir to coat with the sauce. Simmer for 5-7 minutes.
- Stir in the cornstarch mixture and cook until the sauce thickens.
- Transfer to a serving dish and garnish with additional green onions, if desired.
