Ma La Doufu (spicy Manchu Mapo Tofu)

Ingredients

  • 1 block (14 oz) firm tofu, cut into cubes
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green onions, chopped
  • 2 tbsp doubanjiang (spicy bean paste)
  • 1 tbsp Sichuan peppercorns
  • 2 tbsp chili oil
  • 1 cup vegetable broth
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium heat.
  2. Add the garlic, ginger, and green onions, and stir-fry for 1-2 minutes until fragrant.
  3. Add the doubanjiang, Sichuan peppercorns, and chili oil, and stir-fry for another minute.
  4. Pour in the vegetable broth, soy sauce, and sugar. Bring to a simmer.
  5. Add the tofu cubes and gently stir to coat with the sauce. Simmer for 5-7 minutes.
  6. Stir in the cornstarch mixture and cook until the sauce thickens.
  7. Transfer to a serving dish and garnish with additional green onions, if desired.
