Ingredients
- 1 lb pork ears, cleaned and sliced
- 3 tbsp Sichuan peppercorns
- 4 dried red chilies
- 3 green onions, chopped
- 3 slices ginger
- 3 cloves garlic, minced
- 1 star anise
- 1 cinnamon stick
- 1/4 cup soy sauce
- 2 tbsp Chinese cooking wine
- 1 tbsp sugar
- 4 cups water
- 2 tbsp vegetable oil
Instructions
- In a pot, blanch the pork ears in boiling water for 5 minutes. Drain and set aside.
- In a separate pot, heat the vegetable oil over medium heat. Add the Sichuan peppercorns, dried red chilies, green onions, ginger, and garlic. Stir-fry until fragrant.
- Add the blanched pork ears, star anise, and cinnamon stick to the pot. Stir in the soy sauce, Chinese cooking wine, and sugar.
- Pour in the water and bring the mixture to a boil. Reduce heat, cover, and simmer for 2 hours until the pork ears are tender.
- Once the pork ears are tender, uncover the pot and continue to simmer until the sauce thickens.
- Transfer the spicy braised pork ears to a serving dish and garnish with additional green onions if desired.
