Ma La Er Duo (spicy Braised Pork Ears)

Ingredients

  • 1 lb pork ears, cleaned and sliced
  • 3 tbsp Sichuan peppercorns
  • 4 dried red chilies
  • 3 green onions, chopped
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 1 star anise
  • 1 cinnamon stick
  • 1/4 cup soy sauce
  • 2 tbsp Chinese cooking wine
  • 1 tbsp sugar
  • 4 cups water
  • 2 tbsp vegetable oil

Instructions

  1. In a pot, blanch the pork ears in boiling water for 5 minutes. Drain and set aside.
  2. In a separate pot, heat the vegetable oil over medium heat. Add the Sichuan peppercorns, dried red chilies, green onions, ginger, and garlic. Stir-fry until fragrant.
  3. Add the blanched pork ears, star anise, and cinnamon stick to the pot. Stir in the soy sauce, Chinese cooking wine, and sugar.
  4. Pour in the water and bring the mixture to a boil. Reduce heat, cover, and simmer for 2 hours until the pork ears are tender.
  5. Once the pork ears are tender, uncover the pot and continue to simmer until the sauce thickens.
  6. Transfer the spicy braised pork ears to a serving dish and garnish with additional green onions if desired.
